Sourdough Banana Pancake

Sourdough pancakes again, and this time it's Banana!

I'm going to keep this post short and sweet, so... the recipe is here - Sourdough pancake -. I added half a banana just before cooking on a pan, and it worked perfect. ;)

Nice and soft, and naturally sweet.;)
Perfect energy boost breakfast too. ;D

Sourdough Pancake - testing...

Lately I've been testing out recipes for pancakes made with sourdough.
Don't get me wrong!, I do like pancakes made with baking powder or soda (as I mentioned here...), but I love the more bread-like and chewy sourdough pancakes. Plus, that unique, savoury but very slightly sour-sweet taste is something that you can only get with sourdough pancakes. ;D

Ok, the recipe..., the honest truth is... I'm still working on it, but I thought I'll share my attempt because it went pretty well.

Ingredients:
Starter 60g
Plain flour 60g
1 Egg yolk + Milk = 50g
Honey 1 tsp (optional)
1 Egg white

I separated the egg and used the egg white to help rise the pancakes as well as make them more airy. It worked. The pancakes were very light, probably a little too light for me.

Next time I'm going to beat the egg white less and try not to burn the bottom of the pancakes! (Why does a kid say 'toilet!' at the most awkward timing...?)

They still tasted good and were perfect for light sandwiches ;D

Basic pancake

Every now and then, I have an urge to make pancakes...  
And today was one of those days. It was probably because one of my friends asked me for a pancake recipe...
So, I made pancakes for lunch. 


This is my recent favourite pancake recipe. 
Ingredients:
Self raising flour 150g
Milk 150g
Egg 1
Honey 1-2 tbsp
All you need to do is mix everything together and cook on a low-medium heat pan. It's simple but tastes great;)
You can add some vegetable or fruit powder. 
I added carrot, spinach and purple potato before;)
As an alternative to the self raising flour, I often use rice flour and baking powder;)
Lana loves them too. ;D
It's got no sugar so I feel ok even when she eats two big pieces!

Banana yoghurt pancake

Because I love bread, and so does Lana, and there is nothing better than freshly baked bread, sometimes we end up eating all the bread I baked that was meant to be for the following morning.

So, one of those mornings, pancakes come out to help me. ;) My recent favourite is this yoghurt pancake. It's very simple and goes well with any fruits. I added bananas this time. Banana is an awesome choice for a natural sweetness and it keeps you full through out the morning. But be careful, it gets super hot when cooked!

Sweet corn pancake

My daughter has been a little poorly for a few days so I made what I call 'power charge pancakes' in order to get my daughter's appetite back. And..., it worked! In fact, she demanded for the second one!

The pancake batter has no butter, no oil, no sugar, and I mix soy flour to get a protein boost. Sweet corns and maple syrup give the pancake a nice subtle sweetness too.

For both kids and adults, these pancakes are perfect for an easy and healthy breakfast and snack. ;)

Yeast Pancake

Happy Pancake Day! This year I made thick American style pancakes for breakfast.

Instead of baking powder, I used yeast as a rising agent and it made lovely soft think pancakes! I intentionally prepared a small amount of mixture last night that was just enough for the breakfast... because I didn't want to fill myself up in the morning in case there are more pancakes later on!

Ingredients:

Strong flour 50g
Plain flour 50g
Yeast 3g
Brown sugar 1tbsp
Milk 140g
Butter 30g

1. Melt butter. Warm up milk to body temperature. Mix them together.
2. Mix flour, yeast and brown sugar in a bowl by using chopsticks.
3. Pour 1 into 2. Mix with chop sticks. Cover with cling film and leave it in the fridge overnight.
4. Take out the mixture from the fridge. Heat up non-stick pan.
5. Pour the mixture onto the pan. When air bubbles start to pop on the surface of the pancake, turn it over and bake the other side.

Hotteok

Hotteok is a Korean pancake with nuts and brown sugar filling inside. It's a popular street snack especially in the winter.

The texture of the pancake is similar to naan bread, soft and a little stretchy. When I bit into the pipping hot pancake, my mouth was immediately filled with the rich flavour and sweet taste of brown sugar...

Humm yum yum, not only did it make my body warm but also made me feel bit nostalgic... I guess it's because this popular Korean street food is very much like おやき(Oyaki) in Japan. Japan and Korea seem to have quite few things in common...

Normally, peanuts are used for the filling but this time I made them with walnuts for a change, which worked pretty well:)

こどもの日 (Children's day)

Today is こどもの日 (Kodomo no hi, Children's day) in Japan, and the last day of three days national holiday.
Around this day, we see lots of 鯉のぼり (Koinobori), colourful carp-shaped flags raised across Japan. Especially, by the river side you'll see a lots of them lined up and beautifully flying in the sky. That's one of my favourite spring view in Japan.

Unfortunately, I can't easily see the Koinobori in England (in fact, I've never seen one;(...) so..., I made it happen with colourful pancakes! Maybe they aren't as elegant as those flags but at least, they're edible... and cute, and of course, I can feel a bit of Japan...:D

Aebleskiver

 Last day of my stay in Japan, I borrowed my mum's Takoyaki pan to make Danish pancake called "Aebleskiver". It's nothing like those flat pancake, but unique cute ball shape. It a nice finger food and pretty addictive...

I really had to try this cake white I was in Japan because I don't own a Aebleskiver pan myself but I knew my mum's Takoyaki pan would do the job. (Ah, just a quick reference, Takoyaki is a savory ball shape pancake-like thing from Osaka that has a small piece of octopus inside.)

So, I did... Oooh, yes. It came out just I expected, really well :) This only thing was I had to turn the cakes quite quickly to keep them from burning. I guess you shouldn't bake too much at once because you might end up burning some...

They are not sweet, so have them with some jam or sprinkle of sugar ;)

Singaporean pancake, Kueh Dadar

We've had a hairy coconut that Andy bought a few weeks ago. To be honest I didn't know what to do with it...  but this evening, Andy finally decided to cut it. Not only that he even grated it for me to use for this beautiful pandan green cake called Kueh Dadar from Singapore.

As soon as I started cooking the coconut, the kitchen was filled with an exotic flavour and I tasted bits of it, ... ooh, amazing... I was like "it's gonna be good...";)

The pancake's colourful green is from the Pandan flavouring which I got when I was in Malaysia. Pandan leaf is widely used in South Asian cooking, and known for its unique flavour.

When you bite into it, the exotic taste expands in your mouth.... I didn't know the freshly made sugary coconuts are so addictive...;)

Thai Coconut Pancake

Breakie breakie!

If you are looking for a pancake that is a bit different from the usual ones, then this Thai style pancake is the way to go.

There is no plain flour but rice flour, which gives the pancake a unique flavour. Not only that, the exotic taste of coconut hits you every bite, lovely...

Try for breakfast, it's really easy to make;)

Ingredients;

Coconut milk 200ml
Coconut flakes 20g
Egg 1
Sugar 2tbs
Rice flour 80g
Baking powder 1 tsp
Oil 1 tbsp
Salt pinch

1. In a large bowl, combine rice flour, coconut flakes, baking powder and salt, and mix well.
2. Beat egg and sugar together until it's fluffy.
3. Add 1 into 2. Mix well.
4. Add oil into 3. Mix well.
5. Spray oil on a pan. Pour the mixture, and cook both side.
