Sourdough-nuts!

Latest sourdough creation!!!
THE SOURDOUGH-NUTS!

Are you thinking "what's that?!"..?

Ok... let me explain..., they are doughnuts as you see, but they are not just doughnuts. They are made with sourdough starter, so I call them "SOURDOUGH-NUTS". :D

The recipe is in The World of Sweets 2015 Calendar. 

As a raising agent, I use sourdough only, no yeast nor baking powder. Same as most of sourdough bakings, the Sourdough-nuts need long proving time. But, once you've prepared the dough ready to be fried, you can freeze them. Then, you can have Sourdough-nuts sitting in the freezer ready for breakfast or snack;)

Fluffy... and surprisingly light!
You don't taste the sourness at all, and the texture is so light that it's hard to believe they are made with sourdough starter.

Pineapple starter baked doughnuts

I made pineapple yeast and also made a starter with it. The starter didn't look very active...;( I think it's because it's getting cold... just like me...

Anyway, hoping that the starter would work, I made mini baked doughnuts. To my surprise, the doughnuts rose quite well, so I guess the starter worked?

The doughnuts were tiny bit dry so I poured icing sugar over them. They tasted nice but I thought they looked a bit like onion rings with Marie Rose sauce. Well.., we had them with beer. :D

I might try this with my other yeast (Banana? Lemon? Raisin?)

Ingredients:

Pineapple starter 100g
Flour 200g
Demerara sugar 100g
Egg 2
Vanilla extract 1/2 tsp
Oil 2 tbsp

1. Bring the starter to room temperature.
2. Mix eggs and sugar well.
3. Add oil and vanilla extract into 2 and mix well.
4. Mix the starter into 3.
5. Fold in flour into 4. Let the mixture rest over night.
6. Preheat the oven to 180ºc. Pour the mixer into a cake tin.
7. Bake in the preheated oven (180ºc) for 15 minutes.

Mexican Churros

Churros is a nice finger snack, which originated in Spain and popular in Latin American countries.

I first came to know this unique shaped guy when I was at school in Japan. A very popular doughnut company started selling it. At first I thought it didn't look like a doughnut but the name sounded cute..., so gave it a try. It was like a new sensation to my doughnut world! Ever since then, I'm a big fun of Churros:D

A Mexican chain restaurant in London has it on their dessert menu too. Very delicious:)

Today, I made a little twist to the recipe by adding pistachio, which gives it a hint of nutty flavour in every bite. Some are straight and the others are curly funny shape... it's a great fun to make! Just be super careful when you deal with the hot oil.

Doughnuts Parade

They are not colourful cheerio...., but mini doughnuts:D

This time I used the Mini size one. Plus normal size for the remaining mixture. Instead of using butter, I tried with crunchy peanut butter today. The result was pretty good. They've got a lovely peanut flavour:)

I'm a bit addictive to making doughnuts....

Ingredients;

Flour 130g

Baking powder 10g

Sugar 50g

Salt 1 pinch

Egg yolk 1

Egg 1

Milk 75ml

Peanut butter 50g


1. Combine flour, baking powder, sugar and salt in a bowl and mix well.

2. Add egg yolk and egg, mix well.

3. Add milk, mix well.

4. Add melted peanut butter, mix well.

5. Pour the mixture into the doughnut baking tray.

6. Bake in the preheated oven (190º) for 8 minutes.

Doughnuts:)

Day 6 of the baking week, and happy weekend!
Today is... everyone's favourite, Doughnuts.

I've recently bought a doughnut making kit, which has three types of doughnut making trays, an icing syringe and a jam inserting thing. (See the product, Tala Doughnut Making Set)

So, these aren't fried, but baked. Therefore, I suppose they are bit healthier than the normal fried ones. The other good thing about the baked doughnut is that once you made the mixture, you can just bosch them in the oven, not like fried ones, which you can't leave the frying pot..., simply awesome...:)
